Gravity 1020 Fort Collins Newest Restaurant
The Fort Collins Brewery introduces a new concept to Colorado with the addition of the in-brewery restaurant, Gravity 1020. Tom Peters, co-owner of the brewery and restaurant explains, “Most people are familiar with the thriving brewpub scene; however, few have experienced a restaurant setting within a fully functioning production brewery. We are very excited to be able to bring this new experience to Colorado.”
Gravity 1020 will forego standard pub fare in favor of fresh cuisine made with an emphasis on local ingredients and creative pairings. House made breads and unique sauces are a staple of the seasonally changing menu, and scratch cooking will be employed at every opportunity. Farm to table cooking is a central value to the restaurant, resulting in a menu that is brimming with local ingredients.
Restaurant visitors will be afforded a full view of FCB’s brewing and packaging operations and need only turn their heads for golf course and mountain scenery. A large patio seating area offers a relaxing atmosphere and is equipped with heating to extend the outdoor eating season. The spacious bar offers the full FCB line of seasonal and full time brews, a signature beer, as well as wine and liquor.
Visitors to FCB’s Tasting Room will have an opportunity to sample a number of small plates from Gravity 1020, as a limited menu will be offered during normal hours. Gravity 1020 will also offer catering services to FCB’s onsite banquet room which is available to rent for meetings, parties, and other events.
Gravity 1020 opens for business in early May.
